Poor Richard's Benefits from Buffalo's Winged Victory

Get the winning edge at this years Super Bowl party and serve an American original, the classic hot wings.

Buffalo Hot Wings are a unique American creation that took a less favored part of the yard bird and made it into a venerated delicacy. The original hot wing recipe is simple: Chicken wings seasoned with salt and pepper,  deep-fried until the skin is brown and crisp and tossed in a concoction of Frank’s Hot Sauce, butter and vinegar.  Simple, but over the years wings have changed.

Wings today don’t always have bones.  Culinary evolution has created the boneless drummie and the infamous vegan wing. It’s a puzzlement for wing traditionalists who know chicken has bones and are convinced the bone imparts flavor. Almost better than adding flavor, bone-in wings provide an economic stimulus to a menu’s bottom line. In spite of rising food costs, chicken wings are still cheap. 

OK, not as cheap as they once were back in the 1960s when wings were considered scrap until Teressa Bellissio, owner of the Anchor Bar in Buffalo first created the Buffalo wings recipe.  Nonetheless, hot wings are an affordable indulgence and remain the house specialty at countless bars and grille, such as Fenton’s .

Hot wings are Poor Richard’s hottest seller where its weekly wing sales are tallied in tonnage. 

“We sell tons of them,” said our server during a recent visit confirming the menu’s declaration of serving two tons every week. “Look around. Almost everyone has ordered wings. We have people who come in and order them by the tray.”

Poor Richard's hot wings are prepared similarly to the original recipe created at the Anchor Bar. Wings are simply seasoned and deep fried until golden before getting tossed in the house-made hot sauce that’s not too hot or too mild. Fire-eaters who love to burn can order extra hot sauce on the side.

Hot chicken wings are a favorite at Super Bowl parties throughout the area. If you plan on getting a wing carry-out it's best to place your order now. For those who wan't to tackle the recipe for themslves, try the Anchor Bar’s hot wing recipe. It’s easy, fast and promises to give you the winning edge at this year's Super Bowl bash.

Anchor Bar Buffalo Hot Wings

Original recipe created in Buffalo, NY by Teresa Bellissimo

  • 5 pounds chicken wings
  • salt and black pepper to taste
  • vegetable or corn oil for deep-frying
  • 1 stick butter or margarine
  • 2/3 cups Tabasco or Louisiana-style hot sauce
  • 1/4 cup white vinegar

Rinse wings and dry on towel. Cut off the tip (the third joint) on each chicken wing and discard it. Cut each wing in half at the joint. Sprinkle with salt and pepper to taste.

Pour enough oil into a deep fryer or large Dutch oven that will cover the chicken wings – about 2-3 inches deep. Heat over a medium-high to high heat until oil reaches between 375 to 400 degrees.  Add half the wings and cook until the skin is golden brown and crisp. Depending on the size of the wings this could take between 10 – 15 minutes.  Remove and drain on paper towels. Continue cooking remaining wings.

To make sauce: Melt butter in a saucepan over a medium heat and stir in hot sauce and vinegar. Place wings in a large mixing bowl. Toss wings until covered in sauce. Serve with Blue Cheese Dressing. Serves 4 -6.

Blue Cheese Dressing

  • 1 cup real mayonnaise
  • 1/4 cup finely minced green onion
  • 2 cloves garlic, minced or pressed
  • 1/4 cup finely chopped fresh parsley
  • 1/2 cup sour cream
  • 2 tablespoons lemon juice
  • salt, pepper and Tabasco to taste

Combine ingredients and chill for at least an hour before serving.  Makes about 2 1/2 cups of dressing.
