Peachy Summer Recipes

A selection of recipes for those ripe, juicy peaches that are in season.

Carole's Peach Upside Down Cake

  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2/3 cup milk
  • 1 tsp. vanilla
  • 2 eggs
  • 2 tsp. baking powder
  • 1 2/3 cup flour
  • 1/8 tsp. salt
  • 1/4 tsp. almond flavoring

Peach Mixture:

  • 1/3 cup butter
  • 1 cup light brown sugar
  • 1 1/2 cups sliced peaches

Cream shortening and sugar together until fluffy. Add remaining ingredients and beat well. Set aside. Place butter and sugar in a sheet cake pan and heat slowly, stirring constantly until well browned. Add peaches. Cover with cake batter and bake at 350 degrees for 45 minutes. Turn out, peach side up. Serve hot or cold with whipped cream. Serves 6.

Fresh Peach Custard

  • 5 cups peeled and sliced peaches
  • 2/3 cups sugar
  • 3 tablespoons plus 2 tablespoons cornstarch
  • 1 cup water
  • 1 tablespoons lemon juice
  • 1 tablespoon butter
  • one nine-inch pastry shell, pre-baked in a tart pan

Custard:

  • 1 1/4 cups milk
  • 2 egg yolks, beaten
  • 1/4 cup sugar
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla

In a 3-quart saucepan, stir together 1 1/2 cups of peaches, 2/3 cups sugar, 3 tablespoons cornstarch and water. Bring to a boil over a high heat; stirring constantly. Cook two minutes or until very thick. Stir in lemon juice and 1 tablespoon butter; remove from heat and cool 15 minutes. Drain remaining peaches and stir in to cooked peaches. Transfer mixture to baked crust. Refrigerate until chilled.

To make custard: In a 2-quart saucepan mix together milk, egg yolks, sugar and butter, Cook and stir over medium heat until mixture boils and thickens. Stir in vanilla. Transfer custard to a shallow dish and cover surface with plastic wrap. Refrigerate for two hours. Spread cooled custard over peaches and return to refrigerator for at least 3 hours to set. Makes 8 servings.

Peach Salsa

  • 6 peaches, peeled and chopped
  • 2/3 cup orange marmalade
  • 1/4 cup sliced green onions
  • 3 tablespoons cider vinegar
  • 2 teaspoons sugar
  • 1 tablespoon chopped fresh cilantro

In a bowl, combine all the ingredients and mix well. Cover and refrigerate until read to serve. Serve with seafood, chicken or pork.
